【Yume : Sencha】
This is a rare mutant tea born with a low chlorophyll gene.
Due to the low chlorophyll content, photosynthesis is less active, even in sunlight, and the amino acids are less easily broken down into catechins.
The leaves are green with a yellowish tinge, and the fields are golden in the first flush of tea.
It is rare because of its low photosynthesis, slow growth and low yield.
The leaves are thin and extremely bitter if plucked too late, so it is often plucked when the buds are still small (sprouts), which requires skill in cultivation and production.
The tea has a deep, delicious flavour reminiscent of gyokuro, but with a sharp, sharp astringency, making it an unusual-looking yet approachable tea with a good balance.
